Last weekend was one for the books! We went to our first Duke basketball game and it was against #1 Syracuse. We waited all day hoping to get in for free! It was a gorgeous day outside and we were mingling with the students around us. I enjoyed soaking up the Vitamin D and hubs got to study some with his classmate. He had 2 tests this week and 2 tests next week. He generally is a worry wart, but more so because he felt like he should’ve studied more instead of go to the game. But I’m here to balance him out and I said, “Live a little!” He did really well on his first test and we’ll see how the second one goes tomorrow. As a treat, I am making him peanut butter cookies from scratch.
Here’s what you’ll need:
- ½ cup peanut butter
- ½ cup butter (softened)
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 egg
- ½ tsp vanilla
- ½ tsp baking soda
- ¼ tsp salt
- 1 ¼ all-purpose flour
Place peanut butter and butter in your Kitchen Aid mixer bowl. Attach bowl and flat beater to mixer. Turn to speed 6 and beat for about 1 minute, or until mixture is smooth. Stop and scrape bowl. Add sugars, egg, and vanilla. Turn to speed 4 and beat for about 1 minute. Stop and scrape bowl.
Turn to stir speed. Gradually add all remaining ingredients to sugar mixture and mix about 30 seconds. Turn to speed 2 and mix about 30 seconds.
Roll dough into 1” balls. Place about 2” apart on baking sheets (I placed parchment paper first.) Press flat with a fork in a criss-cross pattern to 1/4 “ thickness.
Bake at 375 degrees F for 10-12 minutes, or until golden brown. Remove from baking sheets immediately and cool on wire racks. I like to put Reece’s cups on top of them for decorative and yummy purpose, but I didn’t have any!

I was eating a cookie and I kept thinking to myself why does this taste different. I took my measurement spoon out of the dishwasher and I realized I had used 1 tsp of baking soda, salt, and vanilla! It wasn’t as bad as the time I accidentally put 1 ¼ baking soda in because I was reading the flour measurements. Oops!
Let’s see if hubs even notices when he gets home! 🙂
