Happy Valentine’s Day, everyone!
I made some cute cookies for my Valentine. I’m so thankful that he loves sweets and that I got to use my Kitchen Aid Mixer!
Sugar cookie recipe:
Cream together: 1 cup butter and 2/3 cup sugar (I used Splenda)
Beat in: 1 egg
Add: 1 tsp vanilla, 1/2 tsp salt, 2 1/2 sifted flour (I used wheat)
- Mix until all ingredients are well blended.
2. Chill dough 3-4 hours before rolling.
3. Preheat oven to 350 degrees.
4. Roll out 1/4 inch thick and cut.
5. Bake about 8-10 mins or until barely colored.
6. Remove from cookie sheets and cool on wire racks.
Frosting:
3/4 cup powdered sugar
1 tbs butter
1 tsp milk
1/s tsp vailla
1/4 tsp lemon juice
- Melt butter
- Combine all ingredients
- Beat until smooth
(Add food coloring if desired)
Both my husband and I are nurses. I attempted to make a premature ventricular contraction, when your heart skips a beat 😉
Making cookies from scratch made me realize how much I can’t wait to have kids. I can’t wait to bake with my kids and have them make a mess with the flour. I can’t wait to see the joy in their faces when they are decorating their own cookies or handing out their creations to their friends for Valentine’s day. Those are the memories I can’t wait to make. But for now, I can make sweet memories with my husband. It’s our 2nd married Valentine’s day and I can’t wait to celebrate. Hope everyone has a great day!!
